The last time I roasted a pig (on a bed frame) the crackle was not as perfectly glassy as this time. And even though I had the heat indirect some of it got burned. Not this time. Jeremiah’s spit really made it perfect. He also created a great system for keeping the fire going indirectly and steadily.
