I sizzled water, but it wasn’t really hot enough for a great sear. My advice would be to do the temperature; that is, as hot as you can without smoking the oil. This will also mean you don’t have to worry about overcooking the scallops while getting the pan hot for the glaze.
The grapefruit with thyme is awesome, though, and this is by far my favorite food blog.
