(big fan of nopales here but have only had it in a salad w mexican cheese at guaymas before they took it off menu.)

I can’t tell you why, it’s just how I am, but for some unknown reason I can eat quiche. I tried your nopales salad recipe and like Het I was completely surprised by the slime when they first start to cook! And you’re right – the flavor is similar to a pickled canned green bean. I found nopales in my neighbor’s front yard and I went through the whole process of prepping it (no blow torch though, only vegetable peeler). It wasn’t that hard and was worth the effort.

I’ll give this quiche a shot, but I doubt I’ll find delicata squash. Maybe I can increase the bacon instead 😉

The only ingredients that really need to stay in proportion are the milk & eggs and even those are quite forgiving. Bacon and nopales is good together with or without the squash.

You could also use thinly sliced butternut, but that’s done for the season too.

I’m glad you were able to find nopalitos! That cuts the prep work in half!

Fantastic!

I had never used nopales before and I bought them in a package that was pre-prepped and chopped. But boy are you right – they are seriously slimy once they are cooked. But it does cook off and I’m glad you warned me or I would have thrown them out!
