Loving how it’s unfolding in front of you and I think I even know where you are. Sort of. In any event I’m pretty certain the road trip is exceeding expectations so far.
I have an idea for the sauerkraut (hoping you will get a steady supply for Le Club) but I’ll leave you to develop something with the kombucha mothers. Dunno, maybe as an eventual basis to create your own vinegars?
