Hi Sheila! I wish I had never taken that video down because I’d like to watch it myself and remember how to make puff. It’s not something I do all the time since I’m mostly on the savory side of the kitchen. And as I recall it was pretty funny (how can drinking champagne in 90˚F weather while trying to make puff pastry with butter that is melting not be?). Alas, I can’t find it anywhere… sorry…. 🙁

I also took the basic pastry class in Paris. I loved your puff pastry video, but don’t see it anymore! I have the book and my notes, but I liked just watching the video more than figuring out my scribble.
