I roasted the pumpkin first, then made the pie crust and rolled it out to fit the pie tins. I froze those and by the time I finished all the pie prep the pumpkin was ready to be mashed.

I can’t say that making pumpkin pie from scratch was that much more time consuming or difficult than from the can and I was suprised at how forgiving the recipe.

The flavor was of course AMAZING!
