I think there are a lot of people these days that are buying whole sides of pork (You can buy at Tunitas Creek Kitchen) but then don’t know what to with some of the more obscure cuts. I bet you could order this through Golden Gate market in the Ferry Building or maybe even through Markegard Family Ranch. It will feed a crowd.

I do love cured ham. I think it’s what people expect to see and taste when you say “ham”. And I like the texture. But, I love it Fresh too. The texture can be a little chewier.

I have never in my life seen one in the market. This looks like it can feed a crowd. I love the flavors in your recipe with the orange peel, fennel seed, and rosemary and thyme but I don’t know if I would prefer this cut cured (I do love cured ham) or fresh. What’s your opinion between the two?
