Beet leaves contain more of the nutrients that the actual beet root do. They are a wonderful addition to just about anything you can think of… chop them and swirl them into a bean soup at the last minute for a colour and flavour burst, sautee them and add a balsamic reduction for a sweet treat… a fabulous vegetable.
